MONDAY DELECTABLES: How to Turn Sweet Potatoes Into a Healthy SNACK!!

 BAKED SWEET POTATO FRIES

Being on my new "Healthy - More RAW eating DIET" this year. I am finding new and improved ways to prepare YUMMY food that will nourish my body!. Most people don't know that sweet potatoes are WAY more nutritious than regular potatoes.  They are loaded with Vitamin A in the form of Beta Carotene which your body needs for many things. 
However when a restaurant offers sweet potato "fries",  don’t be misled and think sweet potato fries are better than french fries. Sorry to break it to ya, but fried is fried. No, I’m not sorry, but your health will be. Not to say that you can’t eat them, just know they still end in “fries”.
Good news, you can make them at home and save your body some calories. Sound good? Good. Every time I make these, they don’t stand a chance, I eat them allpsst… they’re gluten-free.
Anyone else eat sweet potatoes for breakfast? Yes, breakfast. When I get tired of my routine oatmeal, I replace it with a baked sweet potato {lightly salted}. YUM!!
Sweet Potato Fries Recipe
Ingredients
  • 2 medium sweet potatoes, peeled
  • 1 Tbsp of brown sugar {optional}
  • 2 Tbsp olive oil
  • salt + pepper and other seasonings
Directions
Preheat oven to 450 degrees.
Halve the sweet potatoes lengthwise and cut each half into. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar {optional}, salt, and pepper and sprinkle on the potatoes.
Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.
