Green Limeade Smoothie

I’ve been traveling, what feels like all summer long and all I want right now is vegetables and this smoothie. and… maybe a small bite of something sweet. . . especially since I am on a anti-candida diet......so i cant eat alot of sugars....... (boooo)

When I’m not traveling, I drink this at least 4x a week, either for breakfast, post workout or late afternoon pick me up. I love it. With all the limes and ice cubes, it’s incredibly refreshing and you’d never even know it wasn’t sweetened with fruit.

Are you familiar with the pH Miracle? It’s all about balancing the alkaline levels in the body be, which can be done through diet, supplements and alkaline water – higher pH. For instance, when the body is more acidic, it can be more susceptible to diseases or illnesses. In the past [when I was sick], I incorporated this diet into my daily lifestyle. If you’re interested, I can share more of my recipes which fit within this alkaline “diet”.  Yes?  No? Maybe so. . .

Super Healthy Green “Limeade” Smoothie Recipe

PRINT Recipe

Ingredients

• 1/2 english cucumber
• 1/2 avocado
• 2 handfuls baby spinach
• 3-4 peeled limes (adjust to desired amount)
• 6-8 ice cubes
• 1/2 teaspoon cinnamon
• liquid stevia to taste or honey

Directions

In blender, blend on high until smooth. Sometimes I’ll add about 1/2 cup of cold water. Once it’s all blended, pour into a large glass and enjoy!

Saturday would have been comedy actress Lucille Ball's 100th birthday. "Lucy" was an American icon and a familiar face to most Americans, especially during the 1950s and 60s when her popular TV sitcoms aired. She died in 1989 at the age of 77.

Lucy's path to fame

Lucy's first acting role was as a Goldwyn Girl, promoting the movie "Roman Candles" in 1933. She was an extra in "The Three Musketeers," then finally claimed a notable role in "Stage Door." In all, Lucy performed in 72 movies, including "Dance, Girl, Dance," where she met her future husband Desi Arnaz.

Ball briefly turned to radio programs, then began her long career in television. "I Love Lucy" aired from 1951 to 1957. She also starred in "The Lucy Show" and "Here's Lucy" in the 1960s and "Life with Lucy"in the 1980s, but none of them were as popular as the original "I Love Lucy."

* first woman to head a major television production studio (Lucille Ball Productions)

Recognition for accomplishments

In addition to the gold medal and Hall of Fame induction, Lucy received 5 Emmys for her dramatic accomplishments and Kennedy Center Honors in 1986.

Posthumously, Ball received a Presidential Medal of Freedom, a Legacy of Laughter/TV Land Award in 2007 and was named one of Time Magazine's 100 Most Important People of the Century.

* Lucy Ball was known for her red hair, but that wasn't her natural hair color. Lucy was born a brunette. She first dyed her hair blonde, then the trademark red.

* Lucy went to drama school in New York with Bette Davis.

* Ball's drama coaches at John Murray Anderson School for the Dramatic Arts reportedly told her she had no future at all as a performer.

* Famous Communist persecutor J. Edgar Hoover enjoyed Lucy's TV show and wrote her a fan letter, despite her having registered as a member of the Communist party. Two years before he sent the fan letter, Hoover's FBI opened an investigation into Ball's alleged anti-American activity.

* Stage names used by Ball early in her career include "Montana" and "Diane Belmont."

* More viewers watched the episode of "I Love Lucy" in which Lucy Ricardo gave birth to Ricky, Jr.than tuned into President Eisenhower's inauguration.

I guess beauty does fade.......SAD!

Monday Delectables: Sweet Potato & Black Bean Salad

SWEET AND SAVORY - SWEET POTATO & BEAN SALAD

I LOVE LOVE LOVE SWEET POTATOES

So much so, I use to eat them for breakfast. lunch. dinner. not always on the same day because that would be waaaayyyy to much sugar!  RIGHT??

A couple weeks back I was staying at my parents house and thought I’d experiment with this recipe. It’s how I earn my keep, cooking, baking and helping them eat their food....LOL Tough, I know. My mom won’t go near sweet potatoes, but my dad, can’t get enough. Like father like son! After I had mixed everything together, dad and I dove in with our forks. Silence, followed by growing smiles. Success!

This to me, is a bowl of comfort and with all my travels, that’s exactly what I needed. The black beans add just enough protein and the warm sweet potatoes mixed with the citrus and fresh cilantro.  So good, I’ve made it three times already.

This dish would go great with a grilled piece of white fish or chicken to make for a heartier meal. Another option, which I’ve been enjoying is eating this leftover for lunch, served cold. Or enjoy as is -  you really can’t go wrong!

Roasted Sweet Potato and Black Bean Salad

PRINT Recipe

Ingredients

• 3 large sweet potatoes, peeled and cut into chunks, approx 1″
• 1 large onion, chopped  – I used sweet onion, but red would work well
• 3 tablespoons extra virgin olive oil
• 1/2 teaspoon salt + pepper, to taste
• 2 cloves garlic, peeled and minced
• 3 tablespoons fresh lime juice
• 1/2 teaspoon ground cumin
• 1 (14oz) can of black beans, drained and rinsed
• 1 cup fresh cilantro, finely chopped

Optional – red bell pepper, chopped

Directions

Preheat oven to 400 F.

Place your chopped sweet potatoes and onions onto a baking sheet, then drizzle about a tablespoon of olive oil – I use my clean hands to carefully toss. Sprinkle salt + pepper. Bake for 30-35 minutes. I suggest tossing veggies after 15 minutes to ensure even cooking. Once the sweet potatoes and onions are nicely golden, remove from the oven. To keep warm, leave on the baking sheet and cover with foil.

Dressing: In a small bowl, mix together 2 tablespoons of olive oil, salt, garlic, fresh lime juice, cilantro, and cumin.

In a large serving bowl, toss in roasted sweet potatoes, onions, black beans and then carefully pour the dressing, mix well.

Serve warm and enjoy!

Makes about 4 servings.
